The Instituto Nacional de la Nutricion Salvador Zubiran, isn’t hard to translate into English (National Institute of Nutrition of Salvador Zubiran), nor are its goals and mission statement. Salvador Zubiran refers to Doctor Salvador Zubiran Anchondo, whom the institute is named for and dedicated to. Dr. Zubiran, born December 23, 1898, was one of Mexico’s top physicians and nutritionists. He attended the UNAM (National University of Mexico), where he received his MD, and later completed a medicine residency in Boston, Massachusetts at the Peter Bent Brigham Hospital.
When Dr. Zubiran returned to Mexico, he began work at Mexico City’s General Hospital, where he founded their department of nutrition, before being assigned to found the National Institute of Nutrition. The institute is considered one of the most important medical institutes in Mexico, and the name was changed to commemorate its founder when he died on June tenth, 1998, in Mexico City.
